We had the pleasure of interviewing Duncan Shouler who is the head winemaker for Giesen Wines in New Zealand, and they are becoming well known for making great zero-alcohol wines. In fact, they have recently released an alcohol-removed sparkling brut!
Duncan shares with us how they make their alcohol free wines - which starts with making a “regular” wine and then removing the alcohol from it. It is a tricky process which requires a lot of skill and science, culminating in the method of alcohol removal they use called Spinning Cone.
And Duncan did not start out with the idea that he was going to make alcohol-free wines. In fact, Duncan did not start out thinking he was going to make wine at all, but thankfully he answered the call!
